My favorite easy pesto recipe with a sneaky way to get in some extra greens!
Super Greens Pesto
(makes about 1 generous cup)
- 1-2 cups fresh basil
- 2 cups dark leafy greens of choice (such as kale, spinach, arugula)
- 1/2 cup walnuts or pine nuts (I like to use 1/4 cup of each)
- 1 clove of garlic
- 1/2 cup extra virgin olive oil
- Juice of 1 fresh squeezed lemon
- 1 Tbs. nutritional yeast (optional- adds a nutritional boost and a cheesy flavor without any dairy)
