Super Greens Pesto


My favorite easy pesto recipe with a sneaky way to get in some extra greens!

Super Greens Pesto
(makes about 1 generous cup)
  • 1-2 cups fresh basil
  • 2 cups dark leafy greens of choice (such as kale, spinach, arugula)
  • 1/2 cup walnuts or pine nuts (I like to use 1/4 cup of each)
  • 1 clove of garlic
  • 1/2 cup extra virgin olive oil
  • Juice of 1 fresh squeezed lemon
  • 1 Tbs. nutritional yeast (optional- adds a nutritional boost and a cheesy flavor without any dairy)
Blend all ingredients in a food processor and enjoy!

Vegan & Paleo Chocolate Chip Cookies!


This cookie recipe if one of my go to's! It's paleo and vegan... that means no grains, gluten, eggs or dairy in these little guys! But.... they don't taste like it! ;) They are a true treat! They are so simple and easy to make with just a few wholesome ingredients! And since there are no eggs in this  recipe, you totally eat the raw cookie dough without any guilt! 


Ingredients

  • 2 cups almond flour 
  • 2 tablespoons coconut flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda or powder
  • 1 tablespoon vanilla extract 
  • dash of cinnamon
  • 1/2 cup  coconut oil , melted
  • 1/2 cup of coconut palm sugar (maple syrup or honey work too!)
  • 3/4 cup dark chocolate chips* (I use Enjoy Life dairy free chocolate chips to keep it vegan, but if your not concerned, any dark chocolate is fine!)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine dry ingredients in a large bowl.
  3. Combine wet ingredients in a small bowl.
  4. Mix wet ingredients into dry ingredients.
  5. If the batter is to dry, just add a few tablespoons of almond milk till it's the right consistency.
  6. Use a small cookie dough scoop or form into 1/2 inch balls and place on a parchment paper lined cookie sheet. Lightly press with fingers or a fork to flatten, they do not expand as much as regular flour.
  7. Bake for 10 minutes.
  8. Let cool.
  9. Enjoy!

Raw Vegan Fudge Brownies


These brownies are so fudgey, you'd never guess they are fully raw, 100% vegan! There so easy to make, there the perfect healthy treat! 

Raw Vegan Fudge Brownies
  • 2 cups dates (or raisins will work okay too)
  • 1/3 cup raw almonds (or any nut)
  • 3-4 Tbs. cocoa powder
  • 2 scoops of vegan chocolate protein powder (I use Perfect Fit)
  • 1/2 cup oats (sub shredded coconut to make it grain free)
  • handful of dairy free dark chocolate chips (I use Enjoy Life)
  • a little water to consistency
  1. First start by chopping the dates in a food processor.
  2. Add remaining ingredients in processor.
  3. It should be a sticky, thick enough batter that you can pick up and form into a shape with your hands. If it's not blending, add a few tablespoons of water at a time.
  4. Press into a brownie pan (or form into balls) and place in the fridge to firm up, or the freezer to be faster.
  5. Enjoy! Store on the counter top for a few days, the fridge up to a week, and you can totally freeze the rest for later!
