Today for lunch, I whipped up one of favorite simple healthy meals! Egg and avocado toast! The combination of eggs and avocado never disappoint. I like to use sprouted Ezekiel bread, which has a lot more nutritional value than refined wheat breads. But, if you're gluten free, use your gluten free bread of choice. Lol
This meal is a great balance of complex carbs, protein and healthy fats (from the avocado and egg yolks)! I love it for breakfast or lunch! It's super easy, but here's how to make it:
You will need:
- 2 slices of bread of choice
- 1/2 an avocado
- 2 eggs
- Salt & pepper to taste
Method:
1. Crack eggs in a pan and let cook for a few minutes. I like the yolk runny, so I don't cook it all the way. Season with sea salt, pepper, and red pepper flakes (if you like hot stuff!)
2. When the eggs are cooking, toast your bread.
3. Mash your avocado on your toast.
4. Top with eggs.
5. Devour. Enjoy!
